Add oats,milk, eggs, yogurt, butter, vanilla, maple syrup, cinnamon, salt, baking powder, and raisins (all the ingredients except walnuts, apples, and chocolate) to a large bowl. Whisk until well combined.
1 cup (240g) milk, 2 large eggs, 1/4 cup (60g) plain yogurt, 1/4 cup (60g) melted butter, 2 teaspoons vanilla extract, 1/4 cup (80g or 60ml) maple syrup, 1 1/2 teaspoons cinnamon, pinch of salt, 1 teaspoon baking powder, 1/3 cup (45g) raisins, 2 cups (200g) old-fashioned oats
Peel the apples (optional) and cut into cubes. Add to the oatmeal mixture and stir until combined.

Grease a small baking dish with butter (I used a 9-inch/23 cm deep dish pie plate), pour the oatmeal mixture into the baking dish.
Sprinkle with the walnuts and chopped chocolate (if using), press them slightly into the oatmeal.

Bake for 40 minutes or until set in the center. If the oatmeal is browning too much in the last 5 minutes, cover it loosely with aluminum foil (it's important that the top of the oatmeal gets nicely golden brown - it will improve flavor and make the top crunchy - you'll love these crispy bits of oats and apples).
